Using pure water from the Island's tallest mountains, the Paps of Jura, which has filtered down to Market Loch below along with some of the tallest stills of any island distillery produces a whisky that tastes rich and rounded, sweet with a hint of subtle smokiness. He will continue to nose them throughout maturation, until he is content that they should be taken forward.
A whisky only Jura could make, born on the island and still produced today in a bottle originally shaped to withstand the roughest of journeys from its home. The cereals can then be combined with a proportion of malted barley in the mash tun and mixed with boiling water to produce the sugary liquid known as wort. A smoky and unpeated whisky that is matured in bourbon casks and finished in sherry, this single malt is well-balanced and presents fruity, dark chocolate notes. The Jura 10 is the cornerstone of that relaunch, aging in ex-bourbon barrels before being finished for an undisclosed time in ex-Oloroso sherry casks. You should also note that the picture images show only our serving suggestions of how to prepare your food - all table accessories and additional items and/or ingredients pictured with the product you are purchasing are not included. With approximately 200 Diurachs – the Gaelic name for the inhabitants – living on the island, most everyone there knows someone who works at Jura. Eventually, all of the selected whiskies are brought together, pumped into vats, and then back into casks where they will rest for a further period of up to six to eight months.
The wort is transferred to a fermenting vat, or washback, where yeast is added and the fermentation process converts the sugary wort into crude alcohol, similar in aroma and taste to sour beer. The barley is first steeped in tanks of water for 2 to 3 days before being spread out on the floors of the malting house to germinate. It's initially aged in American white oak bourbon barrels before enjoying a finishing period in Oloroso sherry butts and bottled at 40% ABV. The “middle cut” is collected by the stillman, only when he is personally satisfied that it has reached a high enough standard.Welcome to Jura: A few miles off the west coast of Scotland you'll find our island: remote, sometimes wild, yet always beautiful, home to 212(ish) islanders, one road, one pub and one distillery.
